Tasting Profile
November 2025
Pale salmon with a rose pink hue, the wine opens with lifted aromas of pink grapefruit, pomegranate, and redcurrant, supported by citrus blossom, cardamom spice, and subtle minerality. The palate is finely etched and textural, revealing layers of grapefruit zest, white peach skin, and wild strawberry. A delicate saline nuance and bright acidity provide focus, length, and drive, leaving a long, detailed finish.

It’s business as usual for Salasso, albeit with perhaps a little extra chalky grip to texture. Red fruits, blood orange, a little spice and dried herb. It has some brightness mixed with a nutty and somewhat umami character, and finishes with a twist of amaro and good length. Has a bit of weight and presence too. Good. Ever reliable.

It’s a dusty bronze and bright. Juicy and tangy with pops of red berries, lemon barley water, musk and red lollies, too. Plenty of refreshing, lively acidity drives this to a decent finish. Quite moreish, too.

Pale onion-skin pink with fragrant peach melba aromas and wet pebble minerality. Dry, creamy on the palate with a zing of zesty acidity, and savoury steeliness driving to the finish. Vibrant and precise.

The fruit was whole bunch pressed and fermentation commenced spontaneously with ambient yeasts in old French oak barriques. Once dry, the wine was left on lees for several months prior to bottling. The wine was bottled without fining and with minimal filtration.
