Skilful, produce driven cooking closes the deal ... as obsessive about harvest integrity as wine maker Sandro Mosele. Exceptional by-the-glass drops from near and far arrive in their own miniature Riedel decanters, well paired with, perhaps addictive crab fritters capped with lemon aïoli, or a delicate tomato consommé over perfectly poached rock lobster.
Venison loin is the standout, sharing the plate with a plump raviolo filled with venison shin, field mushroom pâté and crushed peas. Finish on a wild ride of dark Belgian chocholate moëlleux, honeycomb, berries and basil sorbet. It just works. Affable service lifts an already elevated experience.
